Directions
Prepare the Paneer

Cut the paneer into medium sized cubes. In a bowl, mix cornflour, maida, red chilli powder, black pepper and salt. Add a little water to make a thick coating batter.
Coat and fry the paneer

Add the paneer cubes to the batter and coat them evenly. Heat oil in a pan and fry the paneer until golden and crispy on all sides. Remove and keep aside.
Chop the vegetables

Cut the onions and capsicum into chunky pieces. Finely chop the garlic, ginger and green chillies. Keeping the vegetables chunky gives the dish its restaurant style appearance and crunch.
Prepare the sauce

Heat 2 tablespoons of oil in a kadai. Add chopped garlic, ginger and green chillies. Sauté for a few seconds until fragrant. Add tomato ketchup, red chilli sauce, soy sauce and vinegar. Mix well and cook for a minute.
Cook the vegetables
Add the onion petals and capsicum pieces. Stir-fry on high heat for 2–3 minutes. Keep the vegetables slightly crunchy rather than overcooking them.
Make the gravy
Add water according to your preferred consistency. Mix the cornflour slurry and pour it into the pan while stirring continuously. Cook until the sauce thickens. Adjust salt, black pepper and spiciness to taste.
Add the crispy paneer

Add the fried paneer cubes to the prepared sauce. Toss gently so that every piece is coated with the delicious, spicy gravy. Cook for another 1–2 minutes.
Garnish and serve

Turn off the heat and garnish with freshly chopped spring onion greens. Serve hot with fried rice, noodles or as a delicious starter. ✨ My Special Touch The combination of crispy golden paneer, crunchy capsicum, onion petals and spicy, tangy sauce makes this Chilli Paneer extra delicious. I love the balance of flavours and the vibrant colours that make this dish perfect for a festive 🎊
