Navratri Special – Aloo Chaat Recipe / Vrat Ki Aloo Tikki with Vrat ki chutney

For Sweet Curd
 1 cup curd
 2 tbsp Sugar
 to taste Sendha Namak
Green Chutney (vrat ki chutney)
 2 cups Coriander leaves –
 1cup Mint Leaves
 2tbsp Anardana
 to taste Sendha namak
 2tsp Roasted Cumin
 ½ tsp Pepper powder
 few Ice cubes
  ½ cup Water
For Khatti Meethi Chutney (vrat ki chutney)
 3 cups Water
 ½ cup Ginger grated – 1tsp Roasted cumin pounded
 1 tsp Ginger grated
 1 tbsp Roasted cumin pounded
 to taste Sendha namak
  ½ tsp Black pepper powder
 ½ cup Gur grated
For Aloo tikki
 2 cups Potato (boiled & Mashed) –
 ¾ cup Kuttu Atta (bhuna)
 1 tsp Green chilli chopped
 1 tsp Ginger chopped
 handful Coriander chopped
 to taste Sendha namak
  ½ tsp Pepper powder
 Oil/Ghee – for frying
For Garnishing
 Melon seeds
 Banana sliced
 Grapes sliced
 Pomegranate
 Coriander sprigs
 Roasted cumin

Method
For Sweet curd

Mix together curd, sugar and salt. whisk and keep aside

For Green Chutney

Mix all the ingredients and grind it to a paste. Pour in a bowl and serve.

For Khatti Methi Chutney

Mix all the ingredients and bring to a boil, lower heat and cook for 10 mins. Once it thickens a but remove and strain it. What ever is left in the strainer put it in a blender along with some of the strained chutney and grind it. Strain again and serve.

For Kuttu & Aloo Tikki

Mix all the ingredients and shape into small patties. Heat oil or ghee on a flat griddle and shallow fry on both sides till it is browned and crisp. Then Remove and place it on a plate. Top it up with chilled curd, green chutney, khatti meethi chutney, some grapes, sliced bananas, pomegranate seeds. Additionally you may garnish it with coriander leaves and roasted cumin.
